FILET MIGNON OR TENDERLOIN BEEF STEAK
one of the most best steak is filet mignon or tenderloin. This is my version of the filet mignon. Hope you enjoy it.
Ingredients:
- Beef tenderloin 1 inch thick at room temperature
- Peppercorn
- Sea salt
- 1 cup of Cognac
- 1 cup of heavy cream
- Small block butter
- Asparagus
Cookware:- Cast ion pan
- Oven
- Thermometer
Cooking Steps:- Crush peppercorn then put them with sea salt on both cooking side of the steak.
- Preheat the cast ion pan at high heat with butter until the butter complete melt.
- Put the steak onto the pan and let cook almost burn both side. It should be less then 2 minutes for both sides. Remove the steak from the pan let it cool down in at least 10 minutes.
- To make the steak sauce, reduce heat to medium from left over on the pan. Pour cognac onto the pan and light it up to let alcohol burn until it done. Pour heavy cream onto the pan and stir it until the color turn brown or dark brown.
- Preheat an oven at 250 F. Put the steak into the oven until its internal temperature reach 135 F. Remove the steak from the oven and put it on the serving plate. Let it cool down at least 5 minutes before cutting it.
- Asparagus can be cook in two ways boil or cooking with butter and garlic and salt. To boil, prepare the boiling water then put asparagus in and remove them within 1 minute. To stir fry, prepare the pan high heat with butter and toss the asparagus with garlic and salt in 1 minute.
- To finish pour the sauce on the steak on the serving plate. Put the asparagus on the plate. Make them look pretty. Enjoy!
